This Tuna Salad is a light and refreshing mix of flaky tuna, fresh cilantro, pickles, and crisp celery, all tossed in a simple lemon juice–olive oil dressing.

It’s an easy, healthy lunch that comes together in minutes and can be served on its own, over leafy greens, or as a filling for sandwiches and wraps.

Tuna Salad

Yield: Serves 4

Ingredients:
  • 2 cans of tuna (each 198 g), drained
  • 2 stalks of celery, diced
  • 1 cup chopped fresh cilantro
  • 1 1/4 cups diced dill pickles (not sweet)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • salt and pepper
Instructions:

Place all ingredients into a bowl and toss to combine. Adjust lemon juice, salt and pepper as needed.

Serve with bread or on a bed of fresh greens.
