Salad Shirazi or Salad-e Shirazi, is a popular Persian cucumber and tomato salad that is loaded with herbs and dressed in citrus and olive oil! This salad usually serves as a side dish for most of Persian rice dishes and Persian Kabobs.

Salad Shirazi (Persian Tomato Cucumber Salad)

Yield: Serves 4

Ingredients:
  • 3 cups peeled (or unpeeled) and diced cucumber
  • 2 1/2 cups diced tomato
  • 4 tablespoons olive oil
  • 6 tablespoons lemon juice
  • 1 small onion, diced
  • 3 tablespoons dried mint
  • salt & black pepper to taste
Instructions:

Place all the ingredients in a bowl. Gently toss together. Taste and adjust seasoning and serve.

@Marthe, The original recipe is with mint but if you don't liek the mint, you can replace it with a bit of oregano or cilantro.
