Simple Ginger Cake

Yield: Serves 8
- 1 1/2 cups all-purpose flour, plus 1 tablespoon for dusting
- 1 cup sugar
- 2 eggs
- 3/4 cup oil
- 1 cup milk
- 1 tablespoon grated fresh ginger
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- pinch of salt
- powdered sugar for dusting
Preheat oven to 350 degrees F. Grease a 10-inch bundt pan with oil and dust with flour.
In a medium bowl, whisk together flour, baking powder, nutmeg, cinnamon, and salt. Set aside.
Beat sugar, oil, eggs and vanilla extract with an electric mixer in a mixing bowl until smooth.
Add the dry ingredients to the wet mixture and stir to combine. Slowly pour in milk and stir until smooth. Add the grated ginger and stir well.
Spoon the mixture into the pan.
Bake in the oven until toothpick or skewer inserted into center of cake comes out clean, about 50-55 minutes.
Remove from oven and let the cake cool in the pan for 10-15 minutes. Run a thin-bladed knife around the edges to loosen. Dust with powdered sugar and serve.
