Edamame Couscous Salad

Yield: Serves 4
- 1 cup uncooked pearl couscous
- 1 1/2 cups shelled edamame
- 1/3 cup chopped fresh basil
- 1/3 cup chopped sun-dried tomatoes
- 1/2 cup chopped olives
- 2 tablespoons olive oil
- 4 tablespoons lemon juice
- salt and pepper to taste
Cook the pearl couscous according to package instructions. Drain if needed and let it cool slightly.
Cook the edamame according to package directions, then drain and set aside.
In a large bowl, combine couscous, edamame, basil, sun-dried tomatoes, and olives.
Add olive oil and lemon juice, then toss well to combine. Season with salt and pepper to taste. Serve chilled or at room temperature.
