Hazelnut Mousse
Yield: Serves 4
Ingredients:
  • 4 cups cold milk
  • 8 teaspoons instant hazelnut coffee
  • 6 tablespoons sugar
  • 5 tablespoons rice flour
  • 1/2 teaspoon vanilla extract
  • whipped cream for garnish
Instructions:

Dissolve rice flour and instant hazelnut coffee in cold milk until smooth.

Place flour mixture, sugar, vanilla extract and coffee mixture in a small saucepan over medium-low heat, stirring constantly until comes to the boil and thickens, about 30 minutes.

Pour into individual dessert dishes. Refrigerate for at least 4 hours. Garnish with whipped cream before serving.
