Whipped Feta with Roasted Tomatoes
Yield: Serves 6
Ingredients:

    For Whipped Feta Dip:

  • 200 g feta cheese, broken up into pieces
  • 4 tablespoons olive oil
  • 4 tablespoons water
  • zest of 1 lemon
  • For Tomatoes Topping:

  • 1 cup cherry tomatoes, about 150 g
  • 4 garlic cloves, halved
  • 1/2 cup sliced olives
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • pinch of crushed red pepper
Instructions:

Preheat the oven to 400 degrees F.

Toss all the tomatoes topping ingredients in a small baking dish.

Bake for 25-30 minutes or until tomatoes are soft and begin to burst.

Meanwhile make the feta dip. Add the feta, olive oil, lemon zest and water to a food processor and pulse until smooth.

Transfer the dip to a shallow plate or bowl, top with roasted cherry tomatoes and olives. Serve with bread or crackers.
