- 2 medium salmon fillets, washed and pat dry
- 6 garlic cloves, minced
- 1 tablespoon olive oil
- vegetable oil
- 3 tablespoons lemon juice
- 1/2 teaspoon lemon pepper powder
- 8 tablespoons cottage cheese
- 1 tablespoon butter
- 1/2 tablespoon dried basil
- 1/2 tablespoon dried dill
- salt to taste
Preheat oven to 400 degrees F. Grease a baking dish lightly with oil.
Combine olive oil, salt, 2-tablespoons lemon juice and garlic. Spread over the salmon fillets and marinate for 30 minutes. Remove the fillets from marinade and discard the marinade.
Meanwhile melt the butter in a small pot over medium-low heat. Add cottage cheese, dill and basil; cook for 10 minutes. Set aside.
Place salmon fillets onto the baking dish. Pour 1-tablespoon lemon juice over and sprinkle with lemon pepper powder.
Bake in the oven for 12-15 minutes, depending on the thickness of salmon.
Then cover the fillets with cottage cheese mixture and bake for 10 more minutes. Serve with <a href="https://www.cookingandcooking.com/recipe.php?recname=Mashed-Potato"\" class="linkInLine" target="_blank">Mashed Potato</a>.
