Mast o Khiar (Persian Cucumber and Yogurt Dip)
Yield: Serves 4
Ingredients:
  • 2 cups plain yogurt (I used 3%)
  • 1 1/2 cups grated cucumber (no need to peel, grate on the large holes of your box grater)
  • 2 teaspoons dried mint
  • 2 teaspoons dried oregano leaves
  • 2 teaspoons dried basil
  • 1/2 teaspoon garlic powder, optional
  • 1/2 cup coarsely chopped walnuts, optional
  • salt & black pepper to taste
Instructions:

Gently squeeze the grated cucumber in a colander to remove excess moisture.

Transfer the squeezed cucumber to a serving bowl and add the rest of ingredients. Mix well and adjust seasonings to taste.

Chill for at least 30 minutes and serve.
