Baked Brie Tortilla Bowls
Yield: Serves 3
Ingredients:
  • 6 mini soft tortilla bowls (I used Old El Paso brand)
  • 100 g Brie cheese (or Camembert cheese), cut into 6 pieces
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup chopped sun-dried tomatoes
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano

If the olives are is too salty, soak them in the cold water for 30 minutes or until your desired level of saltiness and then drain.

In a bowl, combine olives, sun-dried tomatoes, garlic and oregano. Set the mixture aside.

Preheat oven to 350 degrees F.

Place the tortilla bowls on parchment paper-lined baking sheet. Divide the mixture evenly among the tortilla bowls. Top with a piece of cheese.

Bake in the oven for 10-14 minutes or until cheese is melted.
