Apple Yogurt Cake
Yield: Serves 8
Ingredients:
  • 1 1/2 cups whole wheat flour (or all-purpose flour)
  • 1 large apple, peeled and cubed
  • 3 eggs
  • 1 cup sugar
  • 1 cup plain yogurt
  • 1/4 cup semi sweet chocolate chips
  • 1/2 cup oil
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • pinch of salt
Instructions:

Preheat oven to 350 degrees F. Grease a 10-inch bundt pan with oil and dust with flour.

In a medium bowl, whisk together flour, baking powder, nutmeg, cinnamon, cardamom and salt. Set aside.

Beat sugar, oil, eggs and vanilla extract with an electric mixer in a mixing bowl until smooth.

Slowly add the dry ingredients and yogurt to the egg mixture and stir until combined. Do not over mix.

Stir in the cubed apples and chocolate chips.

Pour the batter into the prepared pan.

Bake in the oven until toothpick inserted into center of cake comes out clean, about 55-60 minutes.

Remove from oven and let the cake cool in the pan for 10-15 minutes. Run a thin-bladed knife around the edges to loosen.
