Fereni is a traditional Persian pudding dessert made with rice flour, sugar, milk, rose water, and a pinch of cardamom and garnished with cinnamon and pistachios.

This simple Persian rice flour dessert is very comforting for the cold days and can be served warm or cold.

Fereni (Persian Pudding)

Yield: Serves 3

Ingredients:
  • 3 cups cold milk
  • 4 tablespoons sugar
  • 4 tablespoons rice flour
  • 2 tablespoons rosewater (you can find it at any Iranian store)
  • pinch of ground cardamom
  • slivered pistachios for garnish
  • ground cinnamon for garnish
Instructions:

Dissolve rice flour in cold milk until smooth.

Place flour mixture, sugar, cardamom and rosewater in a small saucepan over medium-low heat, stirring constantly until comes to the boil and thickens, about 30 minutes.

Pour into individual dessert dishes and garnish with cinnamon and pistachios. Serve cold or hot.

Made this as dessert for Nowruz dinner! Used almond milk to accommodate lactose intolerant guests and added some cardamom!Amazingly simple and fulfilling. Thanks.
