Baked Spinach Gnocchi

Baked Spinach Gnocchi

Gnocchi is an Italian pasta - the most common gnocchi are made with potato. But I prefer gnocchi made with spinach and ricotta cheese that has lighter and fluffier texture.

What does gnocchi go well with? These spinach gnocchi are very light and delicious, just toss them in a little olive oil, melted butter or any kind of sauce you like and serve. They can be served as a light lunch or dinner.

Baked Spinach Gnocchi

Yield: Makes about 32 gnocchi

Ingredients:
  • 320 g spinach
  • 1 cup ricotta cheese
  • 1 large garlic clove, finely chopped
  • 2 egg yolks
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons all-purpose flour
  • salt and black pepper to taste
Instructions:

Rinse the spinach (do not dry) and place in a pot. Add salt and pepper. Cook over medium heat until tender, about 4-5 minutes.

Drain the spinach in a colander. Once it is sufficiently cool to handle, squeeze out as much water as possible.

Baked Spinach Gnocchi

Transfer the spinach to a cutting board and chop. Let cool to room temperature.

In a large bowl, combine spinach, garlic, ricotta cheese, flour, egg yolks and parmesan cheese. Taste and adjust seasonings.

Dust your hands in the flour. Take a small amount of the mixture and roll them into small balls in your hands.

Baked Spinach Gnocchi

Preheat oven to 350 degrees F.

Lightly spray an 8 x 11-inch baking dish with no-stick cooking spray. Gently place them in the prepared baking dish. Place the baking dish on the middle rack of the oven and bake for 20-25 minutes.

Transfer to a serving dish and serve with any kind of sauce you like.
